I absolutely adore Christmas and in Scandi-land we start already on Sunday with lighting the first candle in our advent stake (there are 4 counting down to Christmas).

Swedish Christmas dinner is very much a meat and fish fest, but I’m planning to sneak in a few vegan dishes between my mums meatballs and my dads sill salad, and I think this carrot, raisin and horseradish salad will look and taste great with it all!
Carrot and Raisin salad with Horseradish dressing
– 5-6 carrots
– 6 tablespoons raisins
– 2 tablespoons sunflower seeds
– 1/2 cup cashew nuts
– 1/2 cup water
– 1 1/2 tablespoons tamari
– 1 tablespoon coconut nectar
– 1 tablespoon lemon juice
– 2 teaspoons horseradish
