Pea and Mint Quinoa

I love Quinoa It’s my favorit grain hand down and I’m in good company: it’s been voted a super crop by the UN!
The power-packed quinoa is considered a complete protein as it contains all 9 essential amino acids, and contains almost twice the amounts of fibre of other grains, it’s gluten free and very easy to digest.
I adore the gorgeous nutty taste and I could easily just eat it on it’s own with some salt and olive oil.
My kids like their quinoa less plain and this recipe is there favorite.
The fresh mint, peas and dressing makes it  more like a dish on it’s own and I sometimes have it as a quick lunch – hot or cold it works equally well!

Pea and Mint Quinoa

– 1 cup quinoa

– 1 cup peas

– 2 spring onions

– 2 tablespoons chopped fresh mint

dressing:

– 3 tablespoons olive oil

– 1 1/2 vinegar

– 1/2 tablespoon maple syrup

– 1/2 teaspoon salt

– black pepper

How to cook Quinoa:
I like mine fairly dry so this is what I do:
Rinse, bring one part quinoa one part water to boil under a lid.
Lower the temperature and let it simmer for 10 min, take it off the heat and leave for another 10 min.
Fluff it up a few times.
serve.

Make a big batch of 47 balls of gorgeous goodness, put them in the freezer and take them out and snack through out the season.
They never truly freeze so you can just pop them in your mouth to instantly satisfy any sweet cravings you might have.
They are also filling and provides you with a nourishing nutrient rich hit.

Healthy Pumpkin Spice Balls

– 25 majool dates

– 2 cups coconut meal for baking

– 1 + 1/4 tablespoons mixed Pumpkin Spice Mix

– 1 teaspoon vanilla extract

– 1/2 teaspoon Himalayan crystal salt

– a few tablespoons water if you need

– 1/4 – 1/2 cup chopped pumpkin seeds to roll in

Fermented Cabbage, Cauliflower and Dill

– 1 cabbage head

– 1/2 cauliflower head

– bunch of dill

– Himalayan crystal salt  (15gram of salt per kilo vegetables)

You  also need:

– Scale

– knife

– chopping board

Crunchy Cabbage with Miso Dressing

I love Chinese cabbage, or Chinese leaves or Napa cabbage.
So tasty, crispy, firm and fresh and full of nutrients.
A super-performer among cruciferous veg and with top-notch antioxidant capacity!
I’m also quite in love with the whole miso-sesame oil combo dressing and it goes so well together with the veg in this salad.
My little one eat this with chop-sticks for a Pokemon Go vibe.
(I know not exactly geographically correct but I’ll use any trick to get the boys eat clean veg)

Crunchy Cabbage Salad with Miso Dressing

– 1/2 head of Chinese cabbage

– 1-2 carrots

– 1 cup edamame beans

– 1 1/2 tablespoon sea spaghetti

– 1 tablespoon sunflower seeds

dressing:

–  3 tablespoons toasted sesame oil

– 2 tablespoons rice vinegar

– 1 tablespoon yellow or white miso

– 1 tablespoon maple syrup

– 1/2 tablespoon tamari

– 1 teaspoon Dijon mustard

Stinging nettles for eating are best harvested in the spring, when they have just shot up, but now you can get it fresh in some health food shops which is absolutely fantastic.

Looking after my Teeth Naturally

My waterpik is ny number one tool for keeping my teeth clean, I could not live without it!
I also brush my teeth with a small amount of Fluoride-Free toothpaste.
