Healthy Coconut and Cinnamon Bites

Happy Halloween everyone!
These coconut and cinnamon bites are so yummy!
It will take you minutes to blend and then they need to set in the fridge for about 40 minutes.
So simple and so quick!
I will also make them for Christmas as the cinnamon makes it a perfect yule treat!

Healthy Coconut and Cinnamon Bites

Ingredients:

– 1 1/2 cup  plus 2 tablespoons desiccated coconut

– 3 tablespoons maple syrup

– 3 tablespoons coconut milk

– 3 tablespoons coconut oil

– 1/2 teaspoon cinnamon

– 1/2 teaspoon pure vanilla

– pinch of Himalayan salt

Breakfast: Nut-Free Overnight Strawberry Bircher (vegan)

There’s nothing better than to start the day with something super delicious and filling that is also hugely healthy!
My morning are always frantic with trying to get the kids ready for school and this bircher works really well for time-strapped mornings, as I just mix it all together the night before, put it in the fridge and dish out in the morning.
(Bish bash bosh! And it gives me time to shower/brush my hair, yay!)
This bircher is nut-free as one of my kids, together with so many others nowadays, are allergic to certain nuts, and because I use sunflower seeds it’s still crunchy and lovely.

Nut-Free Overnight Strawberry Bircher

Ingredients:
Serves 2-4

– 1 cup gluten free oats

– 1 cup coconut milk recipe for home-made coconut milk HERE

-1/2 cup coconut yoghurt

– 1/3 cup sunflower seeds

– 50g strawberries

– 1 tablespoon chia seeds

– 1/2 teaspoon vanilla extract

How to Make Home-Made Coconut Milk

I love this whole coconut bonanza that’s happening at the moment, since I absolutely adore anything coconutty!
Home made coconut milk tastes so much nicer than the stuff you get in the shop and you side step any BPA or guar gum.
It’s also incredibly easy to make!
The fat in the coconut milk contains lauric acid which has anti microbial and anti bacterial properties.
It also contains minerals like iron, calcium, potassium and zinc and vitamin C and E.
And if that was not enough coconut oil is made up of medium triglycerides and is metabolised differently to other fats.
Instead of depositing the fat in the body’s fat cells coconut oil is burned like carbohydrates for energy.

This raw vegan coconut porridge is so delicious it’s almost like a dessert!
It’s packed with goodness and if you like a hearty breakfast look no further, it’s very filling.
It serves 4 but it’s so delish I frequently have it all in one go.

– 2 apples

– 2 dates

– 1/4 cup cashew nuts

– 2 tablespoons sunflower seeds

Health Benefits: Coconut Water

Coconut water

I absolutely love anything coco-nutty.
I cook in coconut oil, use it in my hair, eat the ice-cream and I drink coconut water. Often!
It’s deliciously sweet, low in calories and packed full of goodness and you can get it anywhere nowadays.
Coconut water is the clear liquid from young green coconuts (not the brown small ones in the picture, but they don’t sell the green ones in my supermarket) and they can contain up to one liter in a nut.
It’s full of health promoting vitamins like the B’s and vitamin C and important minerals like potassium, magnesium, sulphur, chlorine and also plant hormones called cytokinins that have anti-aging and anti disease fighting properties. It also stops me raiding the biscuit-tin mid afternoon.

Apart from plain water, it’s the only drink I reach for after exercise, due to its high content of electrolytes, it’s especially high in potassium.
It’s quite common to be a bit deficient in potassium, and especially teenage girls might need a potassium boost.
It’s been suggested that because we used to eat a potassium rich diet, low in sodium, the body held on to the sodium and is still doing this even though nowadays, it’s the other way around.

Coconut water is apparently also an excellent hangover cure something I’m about to find out Tuesday Morning 🙂

Coco Yoghurt

Coco yoghurt

I’m completely obsessed by Co-Yo yoghurt!
It’s basically yoghurt made with coconut milk instead of cows milk.
I have tried mixed berries and natural and both are incredibly good.
One of my boys is lactose intolerant and I’m not keen on giving them soya milk products, so I’m always on the lookout for alternatives. This one is so good I would rather not share…
It was brought to these shores by nutritionist Bethany Eaton, she came across this delicious pudding in Australia and decided to start production in East Sussex.
Yay for that!
