Hi everyone!
I absolutely adore Christmas and in Scandi-land we start already on Sunday with lighting the first candle in our advent stake (there are 4 counting down to Christmas).
I will post a picture on Instagram when it’s up and running if you’re wondering what it looks like.
Swedish Christmas dinner is very much a meat and fish fest, but I’m planning to sneak in a few vegan dishes between my mums meatballs and my dads sill salad, and I think this carrot, raisin and horseradish salad will look and taste great with it all!

Carrot and Raisin salad with Horseradish dressing
Ingredients:

– 5-6 carrots

– 6 tablespoons raisins

– 2 tablespoons sunflower seeds

Dressing:

– 1/2 cup cashew nuts

– 1/2 cup water

– 1 1/2 tablespoons tamari

– 1 tablespoon coconut nectar

– 1 tablespoon lemon juice

– 2 teaspoons horseradish

Avocado Dressing or Dipping Sauce

Hi everyone!
Hope you are having a great start to the week!
My kids have started their Christmas lists and are rehearsing Christmas carols for school so I have that X-mas feeling already!
I’m my book that can never be to early!
This weeks recipe is a Raw Vegan Avocado Dressing that can also be used as a dipping sauce if you reduce the water.
If you love avocados this is defiantly for you, total yum!

 Avocado Dressing or Dipping Sauce

Ingredients:

– 1 avocado

– 1/2 cup water for dressing less for dip (use half for the dipping version)

– 2 tablespoons lime juice

– 1 tablespoon olive oil

– 1 tablespoon raw apple cider vinegar

– 1 garlic clove

– 1/2 tablespoon red onion

– 1/2 teaspoon chili flakes

– 1/2 teaspoon salt

– black pepper to taste

Ingredients:

DRESSING:

– 5 tablespoons coconut manna

– 3/4 C water

– 2 tablespoons olive oil

– 2 tablespoons raw apple cider vinegar

– 1 tablespoon coconut nectar

– 1 tablespoon tamari

– juice from 1/2 lime

– 1 garlic clove

– 1 1/2- 2 teaspoons curry powder

– 1/2 teaspoon chilli flakes

Salad:

– 1 small cauliflower

– 1 cup red cabbage

– 1/2 cup tomatoes

– 3 tablespoons red onion

– 3-4 tablespoons fresh coriander

– pumpkin seeds

– black pepper

– 1 teaspoon turmeric

– 1 teaspoon cinnamon

– 1 teaspoon cardamom

Happy Halloween everyone!
These coconut and cinnamon bites are so yummy!
It will take you minutes to blend and then they need to set in the fridge for about 40 minutes.
So simple and so quick!
I will also make them for Christmas as the cinnamon makes it a perfect yule treat!

We need some sunshine now the day starts before the Sun is up!
It’s pitch black when I get up to make a very noisy but healthy smoothie for the kids before school.
They also want gluten free flakes for breakfast, but now and then I make this raw, sweet, delicious and very filling porridge!
It comes with life affirming, yellow sunshine granules in the form of bee pollen!

Not just great as a salad dressing, It’s also fab as a dipping sauce.
Soak your nuts.
Put all the ingredients in your blender and it’s done.

Raw Choco Smoothie Bowl

As I did the school run this morning some beautiful red and orange leaves dropped down on my head reminding me that even though it’s warm and a long time until I have to get out the cashmere, autumn is here.
I have to say I love it!
Autumn in London is gentle and gorgeous, and soon it’s Halloween which is so much fun in my neighbourhood!
This weeks recipe is a chocolate smoothie bowl full of goodness and beautifying avocado and acai powder.
Great as a filling breakfast or healthy pudding.
It’s also perfect for hiding avocado from picky eaters!
